A fragrant, eggless and dairy-free saffron-cardamom cake made with whole wheat flour, lightly sweetened and topped with crunchy pistachios. Perfect for festive occasions or an elegant everyday treat.

Wet Ingredients
- ·1/4 cup Coconut oil, room temperature, soft — not melted
- ·1 tbsp Olive oil
- ·3/4 cup Powdered sugar
- ·1 1/4 cup Soy milk, divided: 3 tbsp warmed with saffron strands, 1 cup lukewarm for buttermilk, remainder to adjust batter
- ·15 piece Saffron, 10–15 strands infused in warm soy milk
- ·2 1/2 tbsp Apple cider vinegar, combined with 1 cup lukewarm soy milk to make vegan buttermilk; rest 5–10 mins
Dry Ingredients
